Mediterranean Skewers
Ingredients:
- 500g Diced Victoria Hill Lamb
- 2tbsp olive oil
- 2tsp dried oregano
- Salt and pepper
- 4 bay leaves
- 2 capsicum, diced
- 1 red onion, diced
The Victoria Hill Method:
- Massage the diced lamb in olive oil, oregano, salt and pepper and marinate for at least 1 hour.
- Threat lamb and vegetables onto the skewers.
- Preheat grill plate to a medium high heat. Place skewers on grill plate and cook for 6 minutes, turning halfway.
- Serve with lemon and salad.
