Mediterranean Skewers

Mediterranean Skewers

Ingredients:

  • 500g Diced Victoria Hill Lamb
  • 2tbsp olive oil
  • 2tsp dried oregano
  • Salt and pepper
  • 4 bay leaves
  • 2 capsicum, diced
  • 1 red onion, diced

The Victoria Hill Method:

  1. Massage the diced lamb in olive oil, oregano, salt and pepper and marinate for at least 1 hour.
  2. Threat lamb and vegetables onto the skewers.
  3. Preheat grill plate to a medium high heat. Place skewers on grill plate and cook for 6 minutes, turning halfway.
  4. Serve with lemon and salad.
