Easy Lamb Leg Roast

Warrego River Lamb

Classic Sunday lamb roast recipe to enjoy with your family. 

 

What You'll Need:

  • 1 leg of lamb - Order Your Lamb Box Here

  • 1 clove garlic, finely sliced
  • 1 1/2 tablespoons Worcestershire sauce
  • 1/4 cup vinegar
  • 1 teaspoon paprika
  • 1 teaspoon salt (or to taste)
  • 1/2teaspoon nutmeg
  • 2 tablespoons brown sugar
The Victoria Hill Lamb Method:
  1. Make small incisions in meat and insert slices of garlic

  2. Combine Worcestershire sauce, vinegar, paprika, salt, nutmeg and brown sugar.
  3. Place meat in a roasting pan then rub mixture over meat.
  4. Cover and allow to stand for 30 minutes.
  5. Preheat oven to 150ºC.
  6. Cook slowly at 150ºC, allowing approximately 1 hour per kilogram for medium cooked meat.
  7. Baste frequently.
  8. Cover meat for all or part of cooking time (it helps keep the oven clean and the meat succulent).
  9. When cooked, move meat to a serving dish.
  10. Discard excess fat from pan.
  11. Pour into same roasting pan with enough liquid to make required amount of gravy.
  12. Thicken with a little plain flour mixed in 1/2 cup water or stock.
  13. Gravy should end up dark and tasty.
  14. Serve with greens and roasted vegetables.
